How do you use lentils? Please share, as I'm always looking for new ways to use this
awesome legume.

I absolutely love cooking with lentils. Brown and green lentils cook the
same. Lentils are mighty good for us!! Note: do not cook the dry lentils
with salt or acid type foods such as tomatoes, this will keep the skins of
the lentils tough when cooked; add salt and tomatoes when the lentils
are just getting tender.

We borrowed a portable canner from the lds cannery and put dry green
lentils in the #10 cans.....I would have also done brown lentils, but my
supply was low at the time.

and use it in these ways:
Cooked as is, with cheese on top
Taco filling (could add some cooked ground beef also, but good as is too)
Burrito filling
Tostadoes
Taco Soup topped with crushed tortillas and cheese
Enchiladas (amazing and healthier)
Taco Salad
Mexi Lentils n' eggs (sort of a huevos rancheros)

I make Taco Salad using mexi lenitls n' rice when I'm asked to take dinner to
a family......most will then call asking for the recipe. When teaching my classes
on food storage or dollar a day meals, I take this as one of my samples; it is a
popular sample, and I never go home with any left.

Oh, my neighbor made this recipe but used sausage seasonings. She then put
some of it on pizza, then topped with cheese......her kids thought they were eating
sausage pizza!!
