Thanks. Great list and well thought out.
I'm gona offer a couple suggestions (which come from someone who has cooked regularly for 60 to 80 people on outdoor outings, but also from someone who was a cook for many years and a kitchen manager at a TGI Fridays for a few years as well).
Cutting board (it doesn't specify, but I'd go with a large poly one as opposed to a wooden one)
Cooking utensils (I'd go with stainless on everything, although I do love a few good wooden spoons too 8-) )
Pots and Pans (Once again, I'd go with stainless, aluminum will eventually dissolve away... the bad part here is that it dissolves into your food, for most this isn't a huge problem, but for some... like people with epilepsy, this could be bad, I'd also add 1 or 2 medium [or slightly larger] sized dutch ovens)
Clean up (I'd add a squirt bottle of sanitizer and some bleach to make more, and I'd add a bottle of vegi oil for keeping the dutch ovens maintained)
Other items (Go with 4 can openers [instead of 2] and toss in some P-38s or P-51s too, I now see the dutch oven lid lifter, but I never saw the dutch oven [see above comment about adding dutch ovens], also a couple "hot pads" or heavy leather gloves, and I also always toss in several rolls of TP in zip lock bags)
This may go with out saying, but my Chuck Box(es) also include my CampChef 3 burner stove, 2 Banquet Tables, 2 EZ-up tarps, and 2 Coleman lanterns
