This is by far my favorite dutch oven dish. Enjoy!

1 fryer, cut up, or 3 - 4 chicken breasts
2 large #2 can pineapple (will use the juice from both, but the chunks from only one)
1 cup brown sugar
4 tablespoons cornstarch
1 teaspoon salt
1 cup vinegar
2 tablespoons soy sauce
1 to 2 large onions, chopped
2 bell peppers
Several thinly sliced carrots
2 small clove sections of garlic

Skin the chicken. In a 12-inch Dutch oven, brown the chicken in 1/4 cup butter and crushed/sliced garlic for 20 minutes. Cover the oven and continue cooking until the chicken is cooked clear through. Push the chicken aside and make the sauce in the same pan. Drain the pineapple and mix the sugar, cornstarch, salt, vinegar and juice. Stir continuously until thick. Combine the remaining ingredients and simmer over a small fire for 15-20 minutes. Serve over rice. Makes 6+ servings.

* More chicken can be used than stated above or replaced with rabbit.

* After cooking the chicken, I like to cut it into 1/2 inch slices and add after the sauce and veges have been completed.

* Other vegetables can be added as well. The carrots are sliced thin to allow sufficient cooking. If crunchier is desired, cut thicker or add later.

* The recipe provides plenty of sauce. If you'd like less sauce, cut the sauce ingredients in half. This also allows you to add more chicken and vegetables without much change to the sauce.

Um...I have to ask...have you really made sweet and sour rabbit? That's awesome!

Would probably also work with game birds: chukar, pheasant, grouse, etc. We'll have to try it.

Please let us know how it tastes. I'm curious if it would taste "gamey" (is that a word?). Not that in a survival situation I would care lol.

Sweet and Sour Chukar was pretty darn good last night. I like to pre-cook my small game (rabbit, grouse, etc.) in the crockpot as it tends to get quite tough if it's just baked or fried. So I used some pre-cooked chukar. I halved the sauce recipe, then ended up adding the other half after the meat as I had more meat than I thought, so by the time I was done messing with it all, the meat was pretty well shredded in the sauce, but still very tasty! This recipe is hereby tested and approved for wild game. ;)

Over the many times adjusting this recipe, I pretty much ended up doubling the sauce from the beginning (which is reflected in the current recipe listed at the top). I love lots of sauce, especially when rice and chicken are involved. Some people may not like quite so much, but it always seems to work out just right by the time everything is done.

Thanks for trying it out and giving us a report on it!
