Some interesting videos showing results of food stored in the early 90's, now opened and reviewed. It shows that food will actually last a lot longer than most people think. And also that using mylar bags inside of buckets with oxygen absorbers are an optimal storage system. Or using #10 cans with oxygen absorbers as well.

In 1994 we took a section of 6" PVC and added many different types of food, including beans, white sugar, brown sugar, salt and pepper, and sealed the ends, and set the tube outside.

Fast forward 15 years and we cut the tube open...the sugar, salt and pepper were still good, no clumping at all. And the beans and other items were just fine!

We have recently started using Home Depot's 5-gallon buckets because the lids have a large rubber gasket. We also purge the oxygen out with nitrogen before closing the lid for good.

Great idea. I love using 5 Gal buckets for my grains. I used to use nitrogen too. You may want to try O2 obsorbers. Very cheep and fast, designed to do the same thing.
And note date and contents on the outside with a majic marker.
